☆ Thank you to everyone who wished me a Happy Birthday over the weekend! On my birthday, we went to a shabu-shabu/hot pot restaurant, what better place to go on a hot summery day, right? It was nice to introduce my parents to hot pot as they’ve never tried it before. They can be picky eaters but they enjoyed the buffet-style hot pot restaurant that we went to. Afterward, we went to a cafe nearby because I saw that they were selling bingsu, my favorite Korean dessert! Bingsu is soft shaved iced with ice cream and other toppings, we had one with red beans and mochi and it was amazing! You can see my birthday food vlog here.

☆ Last year, my goal was to do the splits comfortably by my 30th birthday, well that didn’t happen. I can technically do the splits on both sides but I have to hoist myself up using my hands for support. However, I recently practiced my splits and I was able to do a split on my left side comfortably! My right side still needs work, I injured my right hip when I was in my 20s so my right side isn’t as flexible as my left side. I achieved my goal of doing the splits (at least on one side) even if I was one year late!

☆ I made vegan katsu tofu curry this week! I used this recipe to make the tofu katsu and made a curry using the ingredients I had and it came out delicious! I tried two different methods when making the tofu katsu, I used oil to fry the first tofu katsu and then I used an air fryer. I prefer the crispiness of the oil fry but if you want a healthier one and don’t want to stand by the stovetop then the air fryer did the trick too but the texture isn’t as crispy.
