Surprise! I have one more DIY for you today! Consider it as my Valentine’s treat to you! This recipe is really simple because it only requires 5 ingredients that you probably already have in your kitchen! They are also healthier than other pancake recipes out there and best of all they are 100% vegan! Make some for your parents, siblings, friends, etc on Valentine’s Day and enjoy! Ingredients (makes 5-6 round pancakes)
– 1 ripe banana
– 1 cup of whole wheat flour (or whatever flour you want)
– 1 cup of almond milk (or your preferred milk choice)
– 1/2 teaspoon of vanilla extract
– 1/4 teaspoon of baking powder
– Cooking spray (I used coconut oil)
Heat up a skillet on the stove and spray with coconut oil (or whatever spray you have). I like to heat up my skillet so it’s ready to use by the time I have my pancake mixture ready. Mash the banana. You can either blend it, mash it with a fork, or put it in a Ziploc bag and squish it in there. Place the mashed banana in a bowl along with the rest of the ingredients in the bowl and mix it! Transfer the pancake mix into a measuring cup. I prefer to use a measuring cup to pour the pancake mixture on to the skillet because it’s easier to control. Carefully pour the pancake mix onto the skillet in the shape of a heart. I drag the measuring cup in the shape of “V” and then use a spoon to make the edges a bit more rounded. It can be tricky at first but practice makes perfect! If you want a fluffier pancake to add more batter.
Once you are done with your pancakes serve in a cute Valentine’s Day plate (I got these sweetheart plates at Target for $1). Top as you please with whatever toppings you like.
