☆ I baked pumpkin spice-flavored conchas (aka pan dulce) for the first time! Conchas are one of my favorite Mexican baked treats, and I’ve always wanted to bake some but baking bread seems like such a daunting experience…and it was! There’s so much waiting involved! However, they turned out pretty good! They weren’t as fluffy as I would’ve liked but they didn’t turn out like rocks, so I’m proud! I used a recipe that I found on Instagram, which I can no longer find. But if you do a quick search, you’ll find various pumpkin concha recipes online. I also themed this week’s flatlay around my pumpkin conchas. lol

Waffle’s Pumpkin Café Surprise 🎃☕

☆ We’re now what should be ‘peak autumn’, however, the weather where I live isn’t falling through (see what I did there?). Even the autumn foliage isn’t doing its thing. I think I saw one red leaf from my window the other day. All I want is colorful trees and chilly weather so I can wear a sweatshirt without sweating. Why is that so hard?!?!

☆ I’ve been obsessed with this tofu nuggets recipe. My previous go-to tofu nuggz recipe doesn’t involve, any breadcrumbs but I love how crispy they make the nuggets taste! I also recommend mixing some seasoning with the breadcrumbs for some extra flavor!

HWASA – Good Goodbye

☆ Ever since finding out about Lucy’s lump, her initial appointment, pre-surgery, the surgery itself, and post-surgery recovery, I’ve been incredibly stressed about everything. I thought after Monday (the day they removed her sutures and her final check-in) that everything would finally be over. However, after they removed her sutures, she started acting strangely and wasn’t eating for two days. We took her back to the vet on Thursday so they could check her out again. Her vet said she was fine and that maybe the stress of everything got to her. They gave her some medicine to help regulate her appetite. I expected her to act like this after her surgery, but not after her suture removal. She’s already looking better than before and slowly reverting to her normal self. She’s still not barking like normal. I never thought I would miss her consistent barking! Her doctor said that it will slowly come back within a few days. Hopefully, everything is finally fine and she’ll be back to normal in a few days. I know Lucy is probably more annoyed and stressed about all this than me.
