This week

Eating: Vegan Shepard Pie. My older sister made one using a bunch of leftover food that we needed to use up and it’s tasted amazing!
Loving: This Dia de los Muertos themed Animal Crossing island. So amazing! I’m working on adding a section to my island to celebrate the Day of the Dead.
Excited for: My parents are coming home this weekend. They spent the last 2 weeks in Mexico visiting family. It will be nice to see them again.

Thank you! My sister made it so I don't know the entire recipe. She made regular mashed potatoes for the outside of the Shepard's Pie but took out any dairy. For the filling, she added a bunch of leftovers we had such as lentils, seasoned mushrooms, vegan meat crumbles, chickpeas, and seasoning. She said she might make it again for Thanksgiving, maybe I can convince her to write down the recipe. ♥
